How to make homemade rice a roni
This post is for my mom, but it showcases one of my absolute favorite, everyday recipes. One I make often and everybody loves. See, my mom and I were at the grocery store together and she was pretty disappointed that the store was out of the low-sodium version of Rice-a-Roni. I suggested she make it herself so she could control the sodium completely. I love Rice-A-Roni but it is much tastier, healthier, and cheaper when you make it yourself. So I thought I would bring this post to the front, and explain how easy it is.

It is just as easy as making the stuff in the box except you do have to measure two things: 3/4 cup long grain rice and 1/2 cup of pasta. You can use fideo or spaghetti, just break it up into little pieces and measure out a 1/2 cup. Then you simply proceed the same way as the box stuff. Melt a little butter and saute the rice and pasta til golden. Add water or chicken stock, spices (garlic, salt, pepper, and a little dried parsley if desired), and a teaspoon of chicken base. Bring to a boil, cover and turn the heat down to low, then simmer for about 15 minutes. Done. Perfectly fluffy, flavorful rice pilaf that really does taste just like Rice-A-Roni but not as salty. There you go Mom. Love you.

Homemade is always best! Great idea! We make a similar recipe and call it Rice Pilaf, I have no idea why though!

I do this. I make enough for about 4 batches and store it in a tupperware in the pantry. Yummy stuff.

On Weight Watchers. Looking for something tasty and simple.
This is GREAT for any diet, and this stuff you can eat a hearty portion and still be in the health zone.

Whoever posted this needs to learn how to write a recipe correctly. ther is no yeild, serving size or really anything useful. If you don’t have a box than you can’t make this since there are no measurements.

I love Rice-A-Roni, but am trying to get away from boxed mixes and try to shift to more wholesome versions of rice and pasta. Have you tried this with brown rice, whole grain pasta, and/or wild rice? What changes would be required?

This recipe sounds very much like one I made up a couple of years ago. I decided that I would try to make an authentic looking/tasting Rice-a-Roni from scratch. I used Arborio rice which looks more like the rice in the box mix, Barilla cut spaghetti, water, chicken flavor granules and H2O. Tastes great, looks the same and is very cheap. Oh, you can add some parsley flakes for a more authentic finished dish look.
