Shrimp Pomodoro

Shrimp Pomodoro is one of my favorite pasta dishes.  Fresh tomatoes, basil, garlic, and white wine all come together to create a delicious yet light sauce.  Paired with hearty penne and plump shrimp, it is a great summer dinner-perfect for ripe tomatoes and smaller appetites.

Flour-less Chocolate Walnut Payard Cookies

I am calling these Payard cookies because that’s where the recipe originated but they go by many names.  Basically they are flour-less chocolate cookies made with egg whites, sugar, and cocoa.  That’s it.  So is a fat-free, gluten free cookie any good?  Oh yes.  These cookies are deep, dark, fudgy and chewy.  With a handful of walnuts sprinkled about and a crisp, crackled brownie top-they are a chocolate lover’s dream.

Apple, Pecan and Gorgonzola Salad with Honey Mustard Balsamic Vinaigrette

I LOVE this salad.  I could eat this salad combination for lunch or dinner, alone or as a starter.  It is an absolutely fabulous, luxurious salad-and that’s not often said about a salad.  Everyone, in fact, loves this salad.  Even those who don’t like blue cheese.  Or don’t like pecans.  Or don’t like salad.

I bought my candied pecans but if your store doesn’t sell them (or doesn’t sell tasty, crunchy ones) you can make them yourself, any candied or sweet nut will work (in fact, candied walnuts would be wonderful).  Also if you aren’t a big blue cheese fan, I suggest getting the Gorgonzola-it is much milder than your typical blue cheese.  Click here for the recipe »

Bacon-Wrapped Turkey Mignons and Corn Salad with Bacon, Tomato, and Avocado

I love bacon wrapped turkey mignons.  They are meaty and special and, when cooked on the grill, smoky and crisp on the outside and juicy and tender on the inside.  You have to be very careful not to over cook them, however.  Turkey will dry out in a flash, which is why we wrap a thick coat of bacon around the outside of each steak.  The bacon is not really for eating, it won’t crisp up very much, but it keeps the turkey from drying out and lends its flavor to the steaks.

Alternately, you can use skewers to keep your medallions wrapped properly but I prefer twine because the less you pierce your steaks the juicer they will be.  Click here for the recipe »
