This wonderful rice casserole is one of my mother-in-law’s holiday side dishes but it is delicious and comforting with any meal. It bakes in the oven leaving you time to worry about your other dishes. Her original recipe calls for a can of sliced mushrooms and a can of condensed french onion soup but the french onion soup has gotten difficult to find so this year we fancied it up with fresh sliced mushrooms, sauteed onions, and beef stock. (...)
Click here for the recipe Oven-Baked Mushroom Rice Pilaf

So this spring, chaos in the kitchen will be four years old! And after three official Thanksgiving dinners I have never posted a recipe for mashed potatoes. Wonder why? I suck at mashed potatoes. I make the worst mashed potatoes you’ve ever had. Without fail. It’s OK. I am at peace with my failures. My mom makes great potatoes and so does my best friend. So I get to enjoy good mashed potatoes on a regular basis and pretty much quit trying. Except this year I got a new stove. This year, I am going to cook Thanksgiving dinner. So this year I figured I better try again.

Here is my problem and the way you can avoid it: I don’t cook my potatoes long enough. Every recipe you’ve read says to cook the stupid potatoes until you can pierce them with a fork. Yeah well, then cook them some more. Because if you stop at I-can-pierce-them-with-a-fork-so-they-must-be-done you are gonna have some lumpy potatoes. Trust me. (...)
Click here for the recipe Mashed Potatoes with Homemade Gravy

I think my favorite seasons are Fall and Grilling. Luckily in Texas grilling season lasts for most of spring, summer, and fall. Jelly? You should be.

This is a great marinade for grilled vegetables. I had a whole bunch of zucchini that needed to be eaten but this marinade would be wonderful on any summer vegetables you feel like throwing on the grill. Just double or triple as needed to coat your veggies well. Served alongside our famous fajitas and grilled corn. (...)
Click here for the recipe Spicy Orange and Cilantro Grilled Zucchini

Here is an easy side to serve with your Mexican dishes. Fluffy white rice tossed with fresh squeezed lime juice and chopped cilantro can make a light dish more substantial or a hearty dish a little lighter. I am not a huge fan of the tomato based Mexican rice dishes but this rice adds just enough extra flavor while still being a blank canvas for highlighting the flavors in the main dish. I always serve it alongside Chipotle Chicken Salad and it would go great with Enchiladas, Veggie Enchiladas, Tacos or Fajitas. Or tuck it into burritos with chicken, refried beans, guacamole and pico for a great on the go lunch or dinner. (...)
Click here for the recipe Cilantro Lime Rice
