I posted above and since I didn't hear anything back from anyone, I decided to try it in non-dairy form anyway. I used Unsweetened Almond milk in place of the low-fat milk and Fleischmann's unsalted margarine (completely soy based) in place of the butter. Though the mixture wasn't incredibly thick, when I stuck it in the crock pot for several hours with meat, it worked out fine and my husband had no idea I made it differently! Thanks for the recipe! I can now make so many more meals for my whole family to eat!

out of curiosity, have you ever substituted anything non-dairy for the 1 cup of milk? My daughter has a dairy allergy and I'm curious to know if soy, almond, coconut, rice, etc...would work?

Found this right when I needed it. Thanks so much! I skipped the fresh mushroom and cup of chicken broth (didn't have it) and instead dumped in a small can of mushrooms (undrained) at the end. Worked out perfectly for my tuna casserole. Will use this all the time instead of that processed, too many ingredients, canned stuff. Thanks again!!

you are so innovative. Thanks for this tip. I hate canned soups too and would love to have another option.
