We called ours goulash and it had just a little more tomato-y sauce with it, just a little though. I made it one night for us and the girls gobbled it up and asked what it was. They said "no way, that isn't like the crappy goulash they serve in school". Teaches them to listen to their mom and not the lunch lady! Looks fantastic, even at 7 in the morning :)

I grew up on this dish, but we called it American Chop Suey. Ours didn't have carrot or tomato paste though. And now I add grated parmasean cheese, yum.

An easy, inexpensive and very customizable meal. I did not grow up eating this at all, but Steve did and it's still one of his favorite comfort foods. I've had a note to make it for a while, but I like your version better than the one I saved. ;)
